Crusty Mediterranean black olive rosemary bread


This is a No knead bread recipe, so you don’t knead this dough!

What you need:  A Dutch oven pot, cast iron pot, Pyrex, ceramic, enamel or Roemertopf. Any heat resistant pot with a cover lid!

Ingredients:
½ teaspoon active dry yeast
3 cups lukewarm water
6 cups all-purpose flour ( you can mix also other flours, like whole wheat , rye..)
2 ½ teaspoon salt
10 black olives chopped
Fresh rosemary shopped


Directions:
  1.     Dissolve in large plastic bowl yeast with lukewarm water.  Add flour and salt, olives, rosemary, stirring until blended.
  2.   The dough will be wet and sticky, that’s ok!
  3.   Cover the  bowl with plastic wrap
  4.   Let the dough rest for 12-18 hours at warm room temperature
  After 12-18 hour the dough is ready and its surface is dotted with bubbles. It looks a kind of messy wet and sticky, but that’s what it should be!

  1.   Dust a tea towel with flour and pour the wet dough on it
  2.   Dust the dough as well 
  3.   Fold dough without pressure once in all directions
  4.   Let it rest till oven and pot are preheated
  5.   Preheat your oven to 475 – 500 degrees Fahrenheit,
  6.   Also put your empty Dutch oven pot, or whatever kind of covered pot you use and preheat it as well for about 20 minutes.
  7.   After 20 minutes preheating remove your empty pot (use your oven mitts!!!) and pour carefully your wet dough into the Dutch oven pot.Don't worry that the dough looks messy. Cover the pot and place it in your oven on the lowest rack!!!.
  8.   Bake covered dough in pot for 30 minutes
  9.   After 30 minutes remove the lid/cover from pot 
  10.   bake bread  for another 30 minutes

  Now your delicious bread is ready, remove bread from pot and let it rest and cool down for 2 hours. This is a wonderful crusty bread. Do not store this bread in plastic bags and also not in the fridge!!! It would destroy the crust.


  Dough additions:
  You can use anything, roasted chopped onions, dry tomatoes, spouted grains, nuts,sunflower seeds, pumpkin seeds, other seeds, coriander seeds, sesame seeds, flax seeds, fennel, anise, oat bran, barley, wheat bran, potatoes. Also mixing different flours is great.




Here are some examples of heat resistant pots with a lid, it doesn't have to be a expensive one, I use a Pyrex casserole pot with a lid and it works fine for me.
